OK Tonda C...this recipe is for you! As soon as the cooler weather rolls around, this is the soup my family asks for! It is always a hit when you serve it. You must, however, use Stewarts Italian Sausage. This is the one time I will tell you NOT to go to Publix and buy Italian Sausage! Stewarts has the best seasoning and enough fennel and it is perfect!
Italian Sausage Soup
1 lb. Italian Sausage, remove from casing
1 medium onion
1 can whole tomatoes
1 can cannelli beans or great northern beans
1 can Condensed Beef Broth
1 1/2 cups water
2 medium zuchhini, cut into slices
1/2 tsp dried basil
Grated romano cheese
I ALWAYS double this recipe. The above is for a single recipe.
Remove sausage from casing. Brown with onion, breaking it up as it cooks, and drain. Stir in tomatoes, beans, broth, water, zucchini and basil. Break up tomatoes with fork. Reduce heat, cover and simmer until zucchini is tender. Add shredded romano cheese to each bowl before serving.
I guarantee you will LOVE this recipe!
